How does a blast freezer work?
A blast freezer uses high-velocity cold airflow to rapidly remove heat from products. Fans push air at 5 to 10 meters per second across the load. This breaks up the warm boundary layer around each item, speeding heat transfer. Products freeze in 1 to 4 hours instead of 12 to 24 hours in standard freezers.
